Diwali Sweets and Savouries - Besan Ladu
We Indians, make different sweets and savouries during festivals especially for the Diwali. Here we start with making of one such sweet, the Besan Ladu. The recipe and preparation is tried and tested by our patrons Sumathi Hariharan and Gayathri Nagesh, which they have shared with you all.Besan is Gram Flour, which we use for a variety of sweets and savouries. Ladu made out of Besan is very tasty and sweet that we find it difficult to stop once we eat one. Besan Ladu is available in many of the bakeries in India but the home made one is completely different. The total preparation time is about an hour and a half including the preparatory steps of slicing the Almond, Cashew etc., grinding Elaichi (Cardamom) and melting the Ghee.
Equipment
- 1 Frying Pan
- 1 Mixing Bowl
- 1 Spatula
Ingredients
- 1 Kg Besan
- 1 Kg Sugar
- 500 Gram Ghee
- 1 Bowl Nuts, Pista, Kismis, Sliced Almond, Cashew
- 2 tbsp Elaichi (Cardamom) Powder
Instructions
- Grind the Elaichi to fine powder
- Roast the Besan well, till you get the aroma of roasted Besan, on a low flame
- Add 3/4th quantity of Ghee into the roasted Besan powder and mix well
- Continue roasting until the colour changes to brown
- Add remaining Ghee and continue roasting on medium flame for few minutes
- When the colour changes brown, put off the flame and allow the mixture to cool completely
- Add Elaichi powder, Sugar, Nuts etc. and mix well
- Continue mixing by hand to break all lumps (if any)
- Make a Ladu (ball) and drop it on to a bowl or hard surface to see whether it breaks or not. The ball should not break.
- If the Ladu breaks, add two-three spoons of Ghee and mix very well. Make a Ladu again and test whether it breaks. We can start making Ladu balls if it does not break.
- Make Ladus and arrange it in a flat container. Besan Ladus is ready for serving
- Store the Ladus in an air-tight container. Enjoy the Besan Ladu with your dear and near
