Vegetable Dum Biryani

Today I have made a special item for lunch and I thought of sharing the recipe with you all. It is a delicious item made with vegetables, ghee, saffron and the great basmati rice the aroma of which no one can resist. You also can make a restaurant grade Veg Dum Biryani at home very easily. Instead of Vegetables, you can make this Dum Biriyani with chicken or meat.

Ingredients for vegetable base:

  • Carrot: 1, cut in small pcs
  • Capsicum: 1, cut in pcs (can use mix colour equal to 1)
  • Beans: 8 to 10, cut in small pcs
  • Cauliflower: 8 to 10, small pcs
  • Paneer: 8 to 10 chunks
  • Onion: 2, cut in small pcs
  • Ginger Paste: 2 tablespoons
  • Garlic Paste: 2 tablespoons
  • Tomato: 2, ground into puree
  • Oil or Ghee (better choice): 4 to 5 tablespoons
  • Saffron: A Pinch

Masala:

  • Chilli Powder: 1 tablespoon
  • Turmeric Powder: 1 tablespoon
  • Garam Masala: 1 tablespoon (or you can use packet biryani masala 2 tablespoons)
  • Salt: 2 teaspoons or as per taste

Other Items:

  • Basmati Rice: 2 cups, soaked for 30 minutes
  • Kevda Water: 3 teaspoons (Must)
  • Curry Leaves: 5 to 6, cut

Preparation:

Put oil/ghee in a pan. After it is hot, add garlic and ginger paste and fry well till it becomes golden brown. Add cut onions and fry well on low flame till the onions become dark golden brown. Add tomato puree and all masala and mix for a minute, then add all the vegetables and Paneer. Put kevda water (important ingredient for biryani). Stir well and allow to cook for some time (cook about 75%).

Cook the soaked rice separately until it is 75% cooked. Drain the water.  Once the vegetable is cooked (75%), put the drained, partially cooked rice on top of vegetable base. Put cut curry leaves on top of the rice and cover the vessel tight. Allow it to cook (Dum) on Low flame, for 25 minutes. The biryani is ready.

While serving, take it from the bottom of the pan with vegetables at base.

To make chicken or mutton biryani, just replace vegetables and paneer with 500gm of chicken or mutton pieces.

Add-on: Pineapple Raita

  • Pineapple: 2 cups, cut in very small pieces
  • Yogurt: 3 cups
  • Salt: Pinch of salt
  • Chat Masala: Half a teaspoon

Mix all and enjoy as  sweet and tangy side dish with Biryani.
