Dhokla is a vegetarian, Gujarati dish/snack. It is made with fermented gram batter. This can be eaten as breakfast, a main course, side dish and a snack. Here is a recipe for making tasty Dhokla at home. Dhokla is served better with Green and/or Sweet Chutney and hence I am adding the recipe for both.
Ingredients for Dhokla
- Gram Flour: 1/2 Cup
- Salt: 1/2 Teaspoon
- Sugar: 1 Cup
- Turmeric Powder: 1/2 Teaspoon
- ENO Salt: 5 Grams
- Water: As required
- Sunflower Oil: 1 to 2 Teaspoons
- Mustard, Thil Seed, Curry Leaves and Chilli for garnishing
Preparation:
Mix Gram Flour with water to make the consistency similar to Iddli batter. Whisk it nicely. Add 1/2 teaspoon salt and 1/2 teaspoon sugar. Whisk again and leave the mix for ten minutes. After that, add ENO Salt and mix it well.
Grease a vessel with oil. Pour the mix into the vessel and cook for 20 minutes. Open the vessel and cool the Dhokla for sometime. Cut it into pieces. Pour 1/2 glass of sugar water on top of the pieces. Garnish with mustard, thil seeds, curry leaves and chilli.
Serve with Green and Sweet Chutney.
Ingredients for Sweet Chutney: For 1 1/2 Cups
- Dates: 200 grams
- Tamarind: 100 grams
- Chilli Powder: 1/2 teaspoon
- Roasted Cumin Seed Powder: 1/2 teaspoon
- Black Salt: 1/4 teaspoon
- Salt: to taste
Remove seeds from the dates and tamarind. Wash and add 1 teacup of water. Leave for two hours. Cook for five minutes. Thereafter blend in a liquidiser and strain. Add the chili powder, cumin seed powder and salt. Mix well. Use as required.
Ingredients for Green Chutney: For 1 Cup
- Chopped Coriander: 2 teacups
- Green Chilli: 4 nos
- Grated Coconut: 4 talespoons
- Lemon Juice: 1 1/2 teaspoon
- Sugar: 3 teaspoons
- Salt: to taste
Put the ingredients in a liquidizer and grind into a paste (add little water if necessary). Use as required.
