Hi every one, enjoy this bowl of yummy soup with tangy spicy salad. The preparation is very easy and has only few ingredients.
For the Soup
- Beetroot – 2 Nos
- Tomato – 1 No.
- Carrot – 1 No.
- Fresh Pepper Powder – 2 Teaspoon
- Green Chilli – 2 Nos
- Ginger – 1 Small piece (about 1/2 inch)
- Coriander Leaves – 3/4 Cup (for grinding and garnishing)
- Pudina Leaves – 2 to 3 (for flavour)
- Salt – To taste
- Sugar – 1 Tablespoon
- Bread Cubes – 4 to 5
Steam all together. Once cooled down, peel and grind them to a puree with fresh fresh pepper, green chilies, ginger, coriander leaves (half cup) and pudina leaves. Simmer it on low flame for about 5 minutes. Add salt (as per taste) and 1 tablespoon of sugar. Microwave the bread cubes to become crisp. Garnish the Soup with the rest of the coriander leaves. Serve hot.
For Salad
- Cucumber – 2 Nos
- Red Kidney Beans – 1 Cup (boiled)
- Feta Cheese Cubes – 3 to 4 Nos
- Lemon Juice – 1 Tablespoon
- Ginger – 1 Tablespoon (Grated)
- Salt – As per taste
- Red Chili Flakes – As per taste
- Olive Oil – 1/2 Tablespoon
Mix all ingredients in a bowl and give it a toss with the olive oil. Spicy tangy healthy salad is ready to serve.
